Every day we get closer to fall. In fact, the first official day of autumn is September 22, which is just next weekend. As we anticipate falling temperatures, my mind quickly shifts to cozy dinners. Today I am sharing a delicious soup recipe that everyone in your family will love.
Loaded Cauliflower Soup
6 slices bacon
1/4 cup onion, chopped
2 cloves of garlic, chopped
3 cups chicken broth
1 lg. head of cauliflower, cut into florets
3/4 cup of sour cream
1 1/2 cup cheddar cheese, grated
chives
salt and pepper to taste
Instant Pot directions-
Turn on the sauté function. Place the strips of bacon in the Instant Pot and allow to fry. Flip over and finish cooking. Remove and place on a paper towel while leaving as much bacon grease in the pot as possible. When the bacon cools, break into pieces.
Once the bacon is removed from the pan, add the onion and garlic. Cook while stirring often until the onions become translucent. Then turn off the sauté function.
Deglaze the pan by adding the chicken broth. Scrap the bottom of the pan until clear. Now add the florets of cauliflower. Place the lid on the Instant Pot and move the vent to close. Set on manual mode to 5 minutes. Allow the pot to naturally release after 10 minutes.
Open the lid and add the sour cream and 1 cup of cheese. Use an immersion blender to puree the soup. Add salt and pepper to taste. Serve warm in bowls. Garnish with more grated cheese, sour cream, and bacon pieces.
Stovetop directions-
Using a pot on the stove, fry the bacon. Remove. Then sauté the onions and garlic. Add the broth and cauliflower. Let the soup come to a boil and then lower to medium heat. Cover the pot and cook for about 30 minutes until the cauliflower is tender. Finish the soup following the above instructions.
