Easy Valentine's Day Dinner Recipe

You forgot to make reservations at your favorite restaurant! Or maybe you hate crowds and prefer to stay in. Either way, you don’t have to be a master chef nor do you want to spend all day in the kitchen on Valentine’s Day. So today I have an easy Valentine’s Day dinner recipe for you to wow your sweetheart.

Creamy Italian Chicken

4 boneless, skinless chicken breasts, thinly sliced or pounded
1 tsp oregano
salt & pepper
3 tsp butter
2 cloves of garlic, minced
1 1/2 cups cherry tomatoes, sliced in half
2 cups raw spinach
1/2 cup parmesan cheese, grated
1 cup heavy whipping cream

Season both sides of the chicken breasts with salt, pepper, and oregano. In a large skillet, heat up some olive oil and brown the chicken breasts. After about seven minutes, turn the breasts over and cook for another 7 minutes. When cooked, remove from skillet and place on a plate.

In the same skillet melt the butter and saute the garlic. After a minute or two, add the cherry tomatoes. Stir occasionally allowing them to heat through. Then stir in the spinach and allow to wilt. Now add the cheese and whipping cream. Allow it to simmer for a few minutes, stirring to combine all the flavors. Then add the chicken back in. Cover and simmer for about 5 minutes.

Serve over rice or pasta. If you are avoiding carbs, zucchini noodles or cauli-rice is a great option. This dish is easily gluten-free as well. Add a side salad for more color and nutrition. Don’t forget to toast your relationship with your favorite beverage.

This chicken dish is so easy to make and it looks like you have spent a long time in the kitchen. Yet it only takes about 20-25 minutes from start to finish. Additionally, the bright red of the tomatoes coupled with the deep green of the spinach swimming in the creamy white of the sauce is also pleasing to the eyes. It really is a great Valentine’s Day entree.
