Peach of a Summer

Are you ready for a peach of a summer? Fredericksburg and other parts of the Texas Hill Country are famous for their peaches. I recently drove through Georgia, arguably the peach capital of the US. Then I ate the best peaches of my life in North Carolina. While Montgomery County does not have this kind of peach notoriety, we can still enjoy peaches in their season.

To beat this unseasonable heat, what better way than with a light and refreshing peach frozen yogurt. The recipe uses frozen peaches, which are not only easy to find but also frozen at its peak ripeness. So it is a win-win for residents of the Lake Conroe area without access to peach orchards galore.

Peach Frozen Yogurt

You will need a good blender or food processor for this recipe.

4 cups of frozen peach slices
3 Tbsp honey
1/2 cup plain yogurt (regular, greek, or low fat)
1 Tbsp lemon or lime juice

Place all ingredients together in a blender or food processor. Process until smooth and creamy.

Serve immediately and store the leftovers in a freezer-safe airtight container.

This is a kid-friendly, gluten-free, low sugar recipe perfect for the summer. It is definitely a recipe that any mom can feel great about.
